Perfectus Pinot Noir 2022



At Simon Tolley Wines, we are firm believers that great wine is made in the vineyard. Each season, no stone is left unturned to grow the best fruit that we can grow. Where particular seasons provide excellent growing conditions, special fruit characters and outstanding wine expressions, Simon puts aside this wine into his premium range of wines called “Perfectus”.

A small parcel of carefully tended vines of Pinot Noir (MV6) fruit was harvested both by hand and by machine from the Simon Tolley Cellar Door Block in Woodside on the 28th March 2022.

A portion of carefully selected Pinot Noir grapes were harvested by hand for the whole bunch ferment component (approx. 35%) of this wine. The remaining fruit was machine harvested by a modern Viti-Selective grape harvester. The hand-picked component capped the fermentation to add further complexity to this wine. After primary fermentation the juice was transferred to barrel and went through partial malolactic fermentation in French barriques over a 10-month period.


 A bright red crimson colour with a beautiful bouquet of raspberry and red cherry fruit aromas. Using quality French oak (30% new), subtle layers of texture linger on the palate with persisting cherry and red plum flavours. A complex yet smooth, medium-full bodied style with subtle and restrained oak.
