BACKGROUND

At Simon Tolley Wines, we firmly believe that great wine is made in the vineyard. Every detail matters when it comes to growing exceptional fruit on our family vineyard at Woodside in the Adelaide Hills. Selecting the right site and the right clone is fundamental to achieving the quality and character we seek in the finished wine.

For our Rosé, we have chosen MV6, one of Australia’s most highly regarded Pinot Noir clones, first registered in Australia in 1974. Known for its small berries and bunches, naturally low yields and later ripening, MV6 is renowned for producing wines with excellent colour, depth and body. Its versatility makes it particularly well suited to Rosé, as well as sparkling and table wines.

HARVEST

A small parcel of carefully selected Pinot Noir fruit was harvested from our Woodside Vineyard in the Adelaide Hills on 17 February 2025.

WINEMAKING

The grapes were destemmed in the vineyard during the cool of the morning to preserve freshness and fruit character. Within one hour of harvest, the whole berries were transferred to the press and gently compressed.

Using only the free-run juice, the wine was transferred to stainless steel for 48 hours of cold settling. The clear juice was then racked and fermented slowly and cool in stainless steel over 14 days.

Following fermentation, the wine was carefully fined, filtered and bottled fresh to retain its vibrant fruit character and freshness.

CHARACTER

A delicate light pink colour with an inviting bouquet of fresh strawberries and rose petal, complemented by a subtle hint of cream. Fresh, elegant and beautifully balanced, this Rosé showcases the vibrant fruit character and finesse of estate-grown Pinot Noir.
