Perfectus Chardonnay 2024
PERFECTUS BACKGROUND
At Simon Tolley Wines, we firmly believe that great wine is made in the vineyard. Each season, no stone is left unturned in our pursuit of exceptional fruit. When a particular vintage delivers outstanding growing conditions, distinctive fruit character and an exceptional expression of wine, Simon sets aside a special parcel for our premium range, Perfectus.
HARVEST
A small parcel of carefully tended Chardonnay vines from the Tolley Vineyard in Woodside was harvested on 13 March 2024. The exceptional seasonal character of the Bernard 95 clone in this vintage made it the clear choice for this special release.
WINEMAKING
The hand-picked grapes were gently whole-bunch pressed directly to seasoned French oak barrels, using only the free-run juice. A high-solids, partial wild fermentation of approximately 50% followed, adding texture, complexity and depth to the wine. The wine then underwent monthly bâtonnage (lees stirring) for approximately 10 months before bottling.
CHARACTER
A gold medal-winning wine that impressed both wine judges and enthusiasts from the moment of release. Produced in an exceptionally small batch, Perfectus is a refined expression of premium Adelaide Hills Chardonnay.
Juicy white peach and lemon curd lead the palate, complemented by a delicate swirl of honey and subtle oak. Rich, textured and beautifully balanced, this is Chardonnay at its most delicious.
