BACKGROUND
At Simon Tolley Wines, we firmly believe that great wine is made in the vineyard. Every detail matters when it comes to growing exceptional fruit on our family vineyard at Woodside in the Adelaide Hills. Selecting the right site and the right clone is fundamental to achieving the quality and character we seek in the finished wine.

Our Pinot Noir is clone MV6, one of Australia’s most highly regarded Pinot Noir clones, first registered in Australia in 1974. Known for its small berries and bunches, naturally low yields and later ripening, MV6 is a versatile clone that is particularly well suited to rosé, sparkling and table wines. Our Chardonnay is clone I10V1, renowned for its purity of fruit, larger berries and generous canopies.

HARVEST
Estate-grown grapes were hand-picked at 10.5–11 degrees Baume, with a varietal blend of 50% Pinot Noir (MV6) and 50% Chardonnay (I10V1). The Pinot Noir was sourced from our Cellar Door vineyard, while the Chardonnay came from our family vineyard on the neighbouring block.

It was an outstanding growing season, with cool nights and mild days providing ideal conditions for developing exceptional fruit quality, freshness and flavour.

WINEMAKING
Made using traditional méthode champenoise techniques, the wine underwent a second fermentation in bottle before resting on its lees for 26 months. It was disgorged in June 2025, allowing the wine to develop added complexity, texture and depth while retaining its freshness and vibrancy.

CHARACTER
This outstanding sparkling wine displays enticing aromas of strawberries and lemon curd, complemented by notes of red apple and grapefruit. Subtle hints of toasted brioche add complexity, while the extended time on lees contributes to a beautifully rounded and refined mouthfeel.
