Sauvignon Blanc 2025
BACKGROUND
At Simon Tolley Wines, we firmly believe that great wine is made in the vineyard. Every detail matters when it comes to growing exceptional fruit on our family vineyard at Woodside in the Adelaide Hills. Selecting the right site and the right clone is fundamental to achieving the quality and character we seek in the finished wine.
For our Sauvignon Blanc, we have chosen F4V6, one of Australia’s most highly regarded Sauvignon Blanc clones, first registered in Australia in 1975. The original selection was made from Château d’Yquem in France in the 1880s before making its way to Australia via Wente Vineyards in California in 1958.
F4V6 produces moderate yields with balanced bunch and berry sizes and delivers fruit with pronounced aromatic and citrus characters, making it ideally suited to producing vibrant, expressive Sauvignon Blanc.
HARVEST
A small parcel of carefully selected Sauvignon Blanc fruit was harvested from our Woodside Vineyard in the Adelaide Hills on 21 February 2024.
WINEMAKING
The grapes were harvested in the cool of the early morning to preserve freshness and delicate aromatics. Within one hour of harvest, the fruit was transferred to the winery and gently pressed.
With minimal skin contact and using 100% free-run juice, the juice was transferred to stainless steel for six days of cold settling. Following settling, the clear juice was racked and fermented slowly in stainless steel tanks over 12 days using QA23 yeast.
The wine was fermented to dryness before being carefully fined, filtered and bottled to retain its vibrant fruit character and freshness.
CHARACTER
An aromatic and fruit-driven Sauvignon Blanc with a clean, crisp palate and beautifully balanced medium weight and alcohol. Ripe pear and passionfruit lead the flavour profile, complemented by notes of green apple, kiwifruit and lime, with a subtle hint of fennel adding complexity.
Fresh and refreshing, the wine has vibrant natural acidity and a long, lingering finish.
