Pinot Noir 2025

BACKGROUND

At Simon Tolley Wines, we firmly believe that great wine is made in the vineyard. Every detail matters when it comes to growing exceptional fruit on our family vineyard at Woodside in the Adelaide Hills. Selecting the right site and the right clone is fundamental to achieving the quality, character and complexity we seek in the finished wine.

For our Pinot Noir, we have chosen the highly regarded MV6 clone, renowned for its deep strawberry and raspberry characters, complemented by subtle baking spice notes of cinnamon and nutmeg. The MV6 is supported by clone 777, which contributes structure, depth and complexity to the final wine.

HARVEST

A warm growing season and well-balanced yields provided ideal conditions to select an exceptional parcel of Pinot Noir from our Cellar Door vineyard at Woodside in the Adelaide Hills. The fruit was harvested on 19 and 26 February 2025.

Situated at 500 metres elevation with a southerly aspect, the Cellar Door vineyard provides ideal conditions for slow, even ripening and the development of high-quality Pinot Noir fruit.

WINEMAKING

The carefully tended vines were harvested in the cool of the morning to preserve freshness, flavour and fruit integrity. Approximately 30% of the grapes were hand-picked for whole-bunch fermentation, adding tannin, earthiness and subtle spice to the wine.

The finished wine was matured in French oak for nine months, with 30% new oak providing additional structure and complexity while allowing the vibrant Pinot Noir fruit to remain at the forefront.

CHARACTER

Bright crimson red in colour, this Pinot Noir opens with an expressive bouquet of sun-ripened strawberries and rich raspberry. Layers of vanilla, nougat and delicate baking spice add warmth and complexity, leading to a beautifully lingering finish with an elegant hint of blue violet.

Refined and vibrant, this is a beautifully balanced Pinot Noir with generous red-fruit character, subtle spice and finely integrated oak.
