At Simon Tolley Wines, we are firm believers that great wine is made in the vineyard. During each season, no stone is left unturned to grow the best fruit that we can grow. Where particular seasons provide excellent growing conditions, special fruit characters and outstanding wine expressions, Simon puts aside this wine into his premium range of wines called “Perfectus”.
Slightly smoky, stony scents. Somewhat toasty and nutty over layers of under-ripe peaches and pineapple. Pleasantly textured and firmly medium-bodied. Elegant. Using quality French oak (20% new), layers of texture persist with white flesh, peach flavour and a hint of citrus acidity.
A small parcel of carefully tended vines of Chardonnay fruit was harvested from the Tolley Vineyard in Woodside on the 5th March 2019.
Hand-picked grapes were gently whole bunch pressed to seasoned French oak barrels using free-run juice only. A high solid, wild fermentation followed, giving the wine texture and complexity. The wine underwent Malo-lactic fermentation with weekly batonage (stirring) for approximately 9 months before bottling.
A complex bouquet with stone fruit aromas. Using quality French oak (20% new), layers of texture persist with white flesh, peach flavour and a hint of citrus acidity. A medium-full bodied style with subtle and restrained oak.
